La dissipaci\u00f3 de calor s&#8217;efectua per convecci\u00f3 for\u00e7ada a trav\u00e9s d&#8217;una pel\u00b7l\u00edcula d&#8217;aigua que envolta i cobreix la superf\u00edcie del producte.\u00a0<strong><a rel=\"noreferrer\" href=\"https:\/\/www.youtube.com\/watch?v=GENBCwnYeOs\" class=\"vp-a vp-yt-type vp-modal-click vp-modal-click_shortcode\">Vegin el v\u00eddeo dels sistemes Hidrocooling din\u00e0mics i est\u00e0tics.<\/a><\/strong><\/p>\n<h4><strong>Principis f\u00edsics<\/strong><\/h4>\n<p>La utilitzaci\u00f3 de l&#8217;aigua es deu a la seva capacitat com a agent de refredament, a la seva f\u00e0cil utilitzaci\u00f3 i al cost econ\u00f2mic del l\u00edquid. Efectivament, quan un corrent d&#8217;aigua freda circula r\u00e0pida i uniforme sobre la superf\u00edcie d&#8217;un cos calent, la seva temperatura superficial arriba a ser pr\u00e0cticament igual a la de l&#8217;aigua en un curt espai de temps. La difer\u00e8ncia m\u00ednima de temperatura, entre el cos i l&#8217;aigua, \u00e9s el resultat d&#8217;una transmissi\u00f3 de calor \u00f2ptima.<\/p>\n<p>Per a qualsevol velocitat del corrent d&#8217;aigua en contacte amb el cos el valor m\u00e0xim mitj\u00e0 s&#8217;obt\u00e9 nom\u00e9s quan el fluid banya uniformement tota la superf\u00edcie.<\/p>\n<p>Si la velocitat del fluid \u00e9s suficient, cas de fluxos d&#8217;aigua per gravetat o per convecci\u00f3 for\u00e7ada, la resist\u00e8ncia t\u00e8rmica a la superf\u00edcie del producte \u00e9s menyspreable. El que equivaldria a dir que la calor procedent de l&#8217;interior del producte es dissipa tan r\u00e0pidament com arriba a la superf\u00edcie i que la difer\u00e8ncia de temperatura a trav\u00e9s de la capa l\u00edmit \u00e9s petita (\u0394T\u22640.5\u00baC).<\/p>\n<h4><strong>Sistemes de refredament per aigua<\/strong><\/h4>\n<h6><u>Hidrocooling din\u00e0mic o continu<\/u><\/h6>\n<p>La soluci\u00f3 m\u00e9s vers\u00e0til que proposem als nostres clients, \u00e9s la d&#8217;un <strong>t\u00fanel de refredament en continu o din\u00e0mic<\/strong> amb una longitud est\u00e0ndard de 5 m, fabricat en taller. Aquest t\u00fanel est\u00e0 fabricat \u00edntegrament en acer inoxidable, a excepci\u00f3 de la cinta transportadora, on s&#8217;utilitza un material pl\u00e0stic d&#8217;alta densitat. Aquestes bateries de refredament s\u00f3n adaptades a t\u00fanels (d&#8217;obra) fabricats in situ, o b\u00e9, a t\u00fanels fabricats en taller.<\/p>\n<p>El <strong>t\u00fanel de refredament<\/strong>, ve de f\u00e0brica amb tots els elements i automatismes integrats. El producte circula per l&#8217;interior del t\u00fanel a una velocitat controlada i regulada per l&#8217;usuari, atenent a la temperatura de sortida desitjada. Les necessitats de fred de l\u2019<strong>Hidrocooling <\/strong>s\u00f3n considerables i la instal\u00b7laci\u00f3 s&#8217;ha de dimensionar per a grans c\u00e0rregues puntuals.<\/p>\n<p>Els serpentins refredadors de l&#8217;aigua es dissenyen amb el criteri de m\u00e0xima superf\u00edcie per unitat de volum i la temperatura d&#8217;evaporaci\u00f3 del gas frigor\u00edfic sol ser de -4 a -3\u00baC, fins i tot m\u00e9s baixa quan al instal\u00b7laci\u00f3 es projecta per a l&#8217;acumulaci\u00f3 de gel.<\/p>\n<h4><strong>Avantatges i inconvenients<\/strong><\/h4>\n<p>El <strong>refredament per aigua<\/strong> \u00e9s una t\u00e8cnica normalment utilitzada per pre refredar fruita, generalment <strong>cirera, hortalisses<\/strong>, com ara <strong>esp\u00e0rrec, api, rave, pastanaga.<\/strong> Aix\u00ed com <strong>fruits d&#8217;os<\/strong> molt espec\u00edfics, com <strong>pr\u00e9ssec<\/strong> o <strong>nectarines,<\/strong> aix\u00f2 s\u00ed, sempre que els costos d&#8217;explotaci\u00f3 ho permetin.<\/p>\n<p>En tots els productes en general el <strong>pre refredament<\/strong> amb <strong>Hidrocooling<\/strong>, \u00e9s beneficiosa per eliminar la calor que presenta el producte de camp, especialment d&#8217;esp\u00e8cies recol\u00b7lectades a l&#8217;estiu. Sempre ser\u00e0 una tecnologia beneficiosa per potenciar la seva qualitat. No obstant aix\u00f2 les pr\u00f2pies caracter\u00edstiques fisiol\u00f2giques i els costos d&#8217;explotaci\u00f3 han de ser considerats.<\/p>\n<p><u>Avantatges<\/u><\/p>\n<ul>\n<li>\u00c9s el m\u00e8tode m\u00e9s r\u00e0pid de pre refredament, de 2 a 3 vegades m\u00e9s r\u00e0pid que l&#8217;aire.<\/li>\n<li>Menor consum energ\u00e8tic en c\u00e0mera.<\/li>\n<li>No produeix p\u00e8rdues de pes.<\/li>\n<li>\u00c9s idoni per a esp\u00e8cies en qu\u00e8 el rentat \u00e9s una tasca comuna a la planta de processament.<\/li>\n<li>Es poden donar tractaments antioxidants o fungicides simult\u00e0niament al refredament.<\/li>\n<\/ul>\n<p><u>Inconvenients<\/u><\/p>\n<ul>\n<li>La seva aplicaci\u00f3 no \u00e9s universal.<\/li>\n<li>S&#8217;han d&#8217;utilitzar envasos molt especials de cara a l&#8217;aigua.<\/li>\n<li>L&#8217;aigua \u00e9s una font important de microorganismes.
