R+D)<\/em><\/p>\n<p><strong>Industrial Lleidatana de el Fred SL (ILERFRED)<\/strong> ha realitzat diferents estudis d&#8217;investigaci\u00f3, centrats principalment en la millora dels par\u00e0metres de la qualitat de la fruita.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><b>1.Introducci\u00f3<\/b><\/span><\/p>\n<p>El <span style=\"font-weight: normal !msorm;\"><strong>caqui<\/strong><\/span> amb nom cient\u00edfic <em>Dyospyros kaki<\/em>, \u00e9s comunament conreat en regions c\u00e0lides (Fig. 1). El caqui \u00e9s originari de la Xina, on s&#8217;ha cultivat durant segles. Havent-se est\u00e8s el seu conreu cap \u00a0a Corea i a el Jap\u00f3, on es van desenvolupar varietats addicionals. Existeixen m\u00e9s de dues mil varietats diferents d\u2019aquesta fruita. A mitjans del 1800 es va introduir als Estats Units i no va ser fins a finals de segle XIX que va fer-ho a Europa.<\/p>\n<p>Xina \u00e9s el principal productor de caqui a escala mundial amb una producci\u00f3 de m\u00e9s de 3 Mt el 2019, en segon lloc, per\u00f2 a molta dist\u00e0ncia es troba Espanya amb una producci\u00f3 de \u00a0482.646\u00a0t. A Espanya, la Comunitat Valenciana disposa de la principal \u00e0rea de cultiu de caquis del pa\u00eds amb una producci\u00f3 de 431 kt, seguida d&#8217;Andalusia amb 44 kt, i de Catalunya i d\u2019Extremadura amb una producci\u00f3 de 1.8 kt (MAPA, 2019). L\u2019astring\u00e8ncia \u00e9s una sensaci\u00f3 t\u00e0ctil i no de sabor, la qual dep\u00e8n del contingut de tanins. Els tanins s\u00f3n compostos polifen\u00f2lics, m\u00e9s o menys complexos, d&#8217;origen vegetal. Els tanins del caqui s\u00f3n d&#8217;un pes molecular particularment alt i la barreja cont\u00e9 suficients grups d\u2019 hidroxil fen\u00f2lics per causar una sensaci\u00f3 astringent (sequedat i arrugament) a la boca (Fig. 2). Per\u00f2 no totes les varietats s\u00f3n astringents, dep\u00e8n del nivell de tanins solubles en la collita. Es consideren astringents aquells cultius que en la collita tenen entre un 0,5 i 1% del seu pes fresc de tanins solubles i no astringents aquells que tenen un nivell inferior al 0,03% del seu pes fresc. Els caquis es poden dividir en quatre grups depenent del nivell d&#8217;astring\u00e8ncia i de la pol\u00b7linitzaci\u00f3 variable a la collita (Novillo et al., 2016):<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><strong><span style=\"color: #000000;\">Pol\u00b7linitzaci\u00f3 constant no astringent<\/span><\/strong> (PCNA), on es troben les varietats Fuyu i O&#8217;Gosho, caracteritzades per ser no astringents independentment de la pres\u00e8ncia de llavors. Les c\u00e8l\u00b7lules t\u00e0nniques deixen de desenvolupar-se en estats primerencs durant el creixement del fruit.<\/li>\n<li><strong><span style=\"color: #000000;\">Pol\u00b7linitzaci\u00f3 variable no astringent<\/span><\/strong> (PVNA), en aquest grup destaquen varietats com Kaki Tipus i Mizushima, les quals s\u00f3n no astringents quan tenen llavors.<\/li>\n<li><span style=\"color: #000000;\"><strong>Pol\u00b7linitzaci\u00f3 variable astringent<\/strong><\/span> (PVA), s&#8217;inclouen en aquest grup varietats com Fuji i Roig Brillant, que s\u00f3n no astringents \u00fanicament al voltant de les llavors.<\/li>\n<li><strong><span style=\"color: #000000;\">Pol\u00b7linitzaci\u00f3 constant i astringents<\/span><\/strong> (PCA), entre les quals es troben les varietats Triumph varietats Triumph i Hachiya, les quals s\u00f3n astringents independentment de la pres\u00e8ncia de llavors.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/www.ilerfred.com\/wp-content\/uploads\/2016\/10\/ILERFRED-Novembre-CAT.pdf\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-7221 size-full\" src=\"https:\/\/www.ilerfred.com\/wp-content\/uploads\/2020\/11\/imagen001.jpg\" alt=\"\" width=\"561\" height=\"161\" srcset=\"https:\/\/www.ilerfred.com\/wp-content\/uploads\/2020\/11\/imagen001.jpg 561w, https:\/\/www.ilerfred.com\/wp-content\/uploads\/2020\/11\/imagen001-300x86.jpg 300w\" sizes=\"auto, (max-width: 561px) 100vw, 561px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><b><i><span style=\"color: #000000;\">Figura 2<\/span> <\/i><\/b><i>Estructura qu\u00edmica de la catequina (A) i galocatequina (B), dos dels tanins (polifenols) predominants al\u00a0 caqui.<\/i><\/p>\n<p>&nbsp;<\/p>\n<p>La pol\u00b7linitzaci\u00f3 variable s&#8217;expressa com l\u2019 enfosquiment dels teixits que envolten els l\u00f2culs quan les llavors s\u00f3n presents, mentre que el tipus de color de la polpa varia amb la constant de pol\u00b7linitzaci\u00f3.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><b>2. L&#8217;astring\u00e8ncia<\/b><\/span><\/p>\n<p>L\u2019astring\u00e8ncia a la polpa del caqui es redueix naturalment durant l&#8217;emmagatzematge de la fruita despr\u00e9s de la collita, aix\u00ed i tot, les varietats restringents s&#8217;han de tractar per tal d\u2019eliminar-la. Un mecanisme \u00fatil en l&#8217;eliminaci\u00f3 artificial de la astring\u00e8ncia del fruit \u00e9s la condensaci\u00f3 o polimeritzaci\u00f3 dels tanins solubles, que causen el sabor astringent, en formes insolubles, gr\u00e0cies a l&#8217;acetaldehid produ\u00eft en la polpa durant el tractament (Taira et al., 1997)<\/p>\n<p><span style=\"font-weight: 400;\">Actualment, hi ha diferents m\u00e8todes per reduir l&#8217;astring\u00e8ncia en el caqui, com els seg\u00fcents:<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Sobre <strong><span style=\"color: #000000;\">maduraci\u00f3 artificial amb etil\u00e8<\/span><\/strong>, el que comporta una vida <strong><span style=\"color: #000000;\">postcollita<\/span><\/strong> curta i una p\u00e8rdua molt important de fermesa, implicant una manipulaci\u00f3 i conservaci\u00f3 molt limitades.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Aplicaci\u00f3 d&#8217;altes concentracions de di\u00f2xid de carboni (CO2), nitrogen (N2), etanol i tractaments en aigua calenta. Tots aquests elements generen una acumulaci\u00f3 d&#8217;acetaldehid en el fruit, que s&#8217;adhereix als tanins solubles convertint-los en insolubles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Un dels m\u00e8todes m\u00e9s utilitzat per a l&#8217;eliminaci\u00f3 de l\u2019astring\u00e8ncia al caqui \u00e9s l&#8217;aplicaci\u00f3 d&#8217;altes concentracions de CO<sub>2<\/sub>, el que indueix la respiraci\u00f3 anaer\u00f2bia produint una acumulaci\u00f3 d&#8217;acetaldehid en el fruit. La durada \u00f2ptima del tractament amb CO<sub>2<\/sub> dep\u00e8n de la varietat i de l&#8217;estat de maduresa del fruit en la collita (Besada et al., 2010). Si el tractament \u00e9s massa curt, els fruits poden tenir una astring\u00e8ncia residual, i si es prolonga en exc\u00e9s pot comportar p\u00e8rdues de qualitat del fruit (Novillo et al., 2014). Per exemple, en la varietat <em>Ro<\/em><em>ig Brillant<\/em>, l&#8217;aplicaci\u00f3 est\u00e0ndard del tractament es realitza en concentracions de CO<sub>2<\/sub> majors al 95 %, a temperatures entre els 12-25 \u00baC i durant 18-24 h, sempre depenent de l&#8217;estat de maduresa de la fruita i variable al llarg de la campanya (Del R\u00edo and Arnal, 2001).<\/span><\/p>\n<p><strong>ILERFRED<\/strong> \u00e9s especialista en la instal\u00b7laci\u00f3 de sistemes de tractament de l\u2019astring\u00e8ncia de caquis. Dotant a la c\u00e0mera d&#8217;un <strong><a href=\"https:\/\/www.ilerfred.com\/ca\/servicio\/control\/\"><span style=\"font-weight: normal !msorm;\">sistema de control <\/span>i seguretat<\/a><\/strong> per tal d&#8217;assegurar l&#8217;efic\u00e0cia del tractament i adaptant-lo a cada varietat.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><b>3. La conservaci\u00f3 del caqui<\/b><\/span><\/p>\n<p>Els caquis s&#8217;han de conservar a temperatura prop dels 0 \u00baC i amb una humitat relativa d\u2019entre el 90-95 %. La vida \u00fatil del caqui \u00e9s molt curta i la seva producci\u00f3 dura pocs mesos, per aix\u00f2 \u00e9s molt important allargar la seva conservaci\u00f3 mitjan\u00e7ant atmosferes controlades. Les condicions atmosf\u00e8riques depenen de la varietat emmagatzemada, per\u00f2 en termes generals es troben entre un 3-5 % d&#8217;oxigen, que permet retardar la maduraci\u00f3 i un 5-8 % de CO<sub>2<\/sub>, que ajuda a mantenir la fermesa i reduir els danys per fred (Toivonen and Forney, 2016). La vida postcollita del caqui a les condicions detallades i lliures d&#8217;etil\u00e8 permeten prolongar la conservaci\u00f3 d&#8217;aquests fruits fins a cinc mesos.<\/p>\n<p>No hi ha unes condicions d&#8217;atmosfera \u00f2ptima per a totes les varietats, ja que, tant els efectes de l&#8217;AC, com el retard de la senesc\u00e8ncia, la disminuci\u00f3 de la taxa de respiraci\u00f3 i la producci\u00f3 d&#8217;etil\u00e8, depenen de la varietat o cultiu de fruita, l\u2019estat fisiol\u00f2gic, la composici\u00f3 de l&#8217;atmosfera i de la temperatura \u00a0i el temps d&#8217;emmagatzematge (Kader, 2002).<\/p>\n<p>A la bibliografia, a sota citada, s\u2019hi troben diferents estudis que demostren les millores de conservaci\u00f3 de caqui sota condicions d&#8217;atmosfera controlada. Com per exemple, permet allargar la conservaci\u00f3 de caqui <em>Fuyu<\/em> amb una major fermesa i amb una incid\u00e8ncia menor d&#8217;alteracions (Ben-Arie and Zutkhi, 1992; Brackmann and Donazzolo, 2001). Per la mateixa varietat, altres autors van observar una major fermesa quan la fruita era emmagatzemada a 0 \u00baC i a 4-6 kPa O<sub>2<\/sub> + 10 kPa CO<sub>2<\/sub> (Park, 1997), i emmagatzemant a -0.5 \u00baC sota 15 kPa O<sub>2<\/sub> + 15 kPa CO<sub>2<\/sub> (Brackmann et al., 1999). Kader (2003) va mostrar que atmosferes amb un contingut d&#8217;O2 baix o un alt contingut de CO2 alenteixen l&#8217;activitat dels enzims que degraden la paret cel\u00b7lular provocant l&#8217;estovament de la fruita. Arnal et al. (2008) van trobar que, un AC compost per un 97% N<sub>2<\/sub> + aire permetia emmagatzemar caqui <em>Roig Brillant<\/em> fins a 30 dies a 15 \u00baC, mantenint la fermesa comercial i sense necessitat d&#8217;un tractament addicional per a remoure l\u2019astring\u00e8ncia.<\/p>\n<p>A <strong>ILERFRED<\/strong> comptem amb \u00a0m\u00e9s de 35 anys d&#8217;experi\u00e8ncia en <strong><a href=\"https:\/\/www.ilerfred.com\/ca\/servicio\/fred-industrial\/\">instal\u00b7lacions<span style=\"font-weight: normal !msorm;\"> de <\/span>fred<\/a><\/strong> i <strong><a href=\"https:\/\/www.ilerfred.com\/ca\/servicio\/atmosfera-controlada\/\"><span style=\"font-weight: normal !msorm;\">atmosfera controlada<\/span><\/a><\/strong>. Implicant-nos sempre en tot el proc\u00e9s, des de la primera pregunta fins al manteniment de la instal\u00b7laci\u00f3. Les inquietuds dels nostres clients i les nostres s&#8217;han reflectit en millores cont\u00ednues de les instal\u00b7lacions.<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"color: #000000;\">4. Desordres en la postcollita<\/span><\/strong><\/p>\n<p>La majoria dels trastorns <strong>postcollita<\/strong> es desenvolupen despr\u00e9s d&#8217;un per\u00edode d&#8217;emmagatzematge en fred. Els trastorns m\u00e9s comuns s\u00f3n causats per malalties que s\u2019infecten a trav\u00e9s de talls i abrasions.<\/p>\n<p>Algunes varietats de caqui s\u00f3n molt sensibles als danys per fred (Fig. 3). Amb l&#8217;objectiu d&#8217;inhibir aquest s\u00edmptoma diferents autors han tractat la fruita amb 1-Methylcyclopropene (1-MCP). L&#8217;1-MCP permet estendre la vida \u00fatil i la qualitat dels productes vegetals actuant sobre la resposta de l&#8217;etil\u00e8. A temperatura i pressi\u00f3 est\u00e0ndard, l&#8217;1-MCP \u00e9s un gas amb un pes molecular de 54 i una f\u00f3rmula de C<sub>4<\/sub>H<sub>6<\/sub>. (2004) van aconseguir retardar la p\u00e8rdua de la fermesa del caqui <em>Roig Brillant<\/em> combinant l&#8217;acci\u00f3 de l&#8217;1-MCP amb un emmagatzematge a 1\u00b0C.Girardi et al. (2003) van reportar un manteniment prolongat dels nivells alts de fermesa en caqui Fuyu emmagatzemat a 0\u00baC i tractat amb 1-MCP. A la bibliografia hi ha poca informaci\u00f3 sobre l&#8217;efecte d&#8217;aquest tractament a les diferents varietats i condicions.<\/p>\n<p>El caqui \u00e9s sensible a l&#8217;enfosquiment intern de la polpa el qual es manifesta quan el fruit \u00e9s exposat a determinades condicions durant el per\u00edode de vida postcollita. Els danys mec\u00e0nics, com ara el raspallat excessiu, s\u00f3n una de les principals causes l\u2019embroniment de la polpa del caqui, ja que aquests fruits s\u00f3n molt sensibles als cops. Un altre factor associat a l&#8217;aparici\u00f3 d&#8217;aquesta fisiopatia \u00e9s l&#8217;emmagatzematge sota AC, sent en aquest cas la zona del cor del fruit la que es veu m\u00e9s afectada (Fig. 4). Tamb\u00e9 cal tenir en compte que l&#8217;exposici\u00f3 del fruit a condicions\u00a0d&#8217;anaerobiosi, durant el tractament de desastring\u00e8ncia amb altes concentracions de CO<sub>2<\/sub>, poden resultar en desordres d&#8217;aquest tipus quan el tractament s&#8217;allarga en el temps (Besada et al., 2017). Conclusions<\/b><\/span><\/p>\n<p>El caqui \u00e9s un fruit amb determinats problemes fisiol\u00f2gics durant l&#8217;emmagatzematge. \u00c9s per aix\u00f2, que a l&#8217;hora de dissenyar les c\u00e0meres cal tenir una principal atenci\u00f3 a les caracter\u00edstiques de la varietat. Les varietats no astringents s\u00f3n m\u00e9s sensibles a la temperatura, podent presentar enfosquiment de la polpa i p\u00e8rdua de qualitat. Una concentraci\u00f3 d&#8217;etil\u00e8 elevada a l&#8217;interior de la c\u00e0mera durant la conservaci\u00f3 provoca una acceleraci\u00f3 de la senesc\u00e8ncia del fruit. L&#8217;exposici\u00f3 del caqui a nivells d&#8217;oxigen inferiors al 3%, pot provocar una p\u00e8rdua de la qualitat sensorial i fisiol\u00f2gica.
